Add gallery screenshots for Umbrel App Store

Browse source 
4 screenshots showing PyBLOCK in action:
- 1.png: Main menu with Rich panels
- 2.png: Bitcoin submenu with categorized columns
- 3.png: Block visualizer treemap
- 4.png: TUI dashboard

Updated umbrel-app.yml gallery references to .png format.
